Cast iron cookware

It’s taken me a while, but I finally broke down and bought myself some cast iron cookware. I had forgotten what a difference cooking with cast iron makes to the taste of food! In South Africa, we have a traditional dish called “potjiekos” - literally “pot food” - that is typically cooked in a 3-legged cast iron pot over an open fire, so the concept of cast iron cooking isn’t new to me.
Cast iron cookware works brilliantly for stewing and braising, but isn’t intended to replace your non-stick and/or stainless steel pots and pans. In fact, do not attempt to cook anything in cast iron that needs a non-stick surface; eggs and rice especially do not work well in cast iron and stick like crazy. Even if you do add an abundance of liquid such as veggie broth or wine to the rice, it still takes forever to soften.
I have made some killer vegetable curries in my Dutch oven, and mushrooms and onions sauteed in a cast iron skillet simply cannot be beat. Give it a try. I’ll be willing to bet you’d be very happy you did.
I use the pre-seasoned Lodge brand of cast iron cookware available at the Lodge website. Any good hardware store (such as ACE Hardware if you have one near you) should also stock cast iron, or you can buy it now from Amazon. Happy cooking!
