12 Quick Fixes With Cheese

1.  Place slices of pan-seared eggplant (aubergine) on a lightly greased baking sheet, top with basil pesto, sliced tomato and Gruyere cheese. Season and bake for 20 minutes until cheese has melted.

2. Prepare an omelette stuffed with mature or sharp cheddar cheese and serve hot with buttered toast and shitake mushrooms sauteed in sweet sherry.

3. Serve slices of fruit cake with shavings of Parmesan cheese.

4. Layer thinly sliced potato, sweet onion and slices of Brie in a baking dish. Drizzle with regular whipping (fresh) cream, chopped chives, salt and ground black pepper. Bake in a 375 degree F (425 C) oven until soft and creamy.

5. Top toasted ciabatta slices with fig jam and slices of Brie. Grill until cheese is melting.

6. Serve a block of Pont l’Eveque with dried figs soaked in sherry.

7. Toss asparagus in extra virgin olive oil, garlic and chili powder. Grill and top with goat’s milk cheese.

8. Split open some ripe figs, top with mascarpone and honey. Grill until slightly melted and warm.

9. Mix pureed strawberries and berry liquer with mascarpone. Serve with squares of sponge cake.

10. Cut watermelon into cubes, top with fresh mozzarella. Spoon over some olive tapenade and pieces of Arugula (rocket).

11. Make a spinach risotto and mix in pieces of Gorgonzola just before serving.

12. Melt Roquefort in a little cream and toss into angel hair pasta.
