An Easy Guide to Match Cheese and Wine

This list is by no means all-encompassing, but it is a handy reference when you need some guidance in a pinch.
Goat’s Milk: Sauvignon Blanc and sparkling wines
Mature goat’s milk: Robust reds like Barolo, Cabernet Sauvignon, Merlot, Shiraz and Zinfandel
Soft/semi-soft white or washed rind cheese: Oaky Chardonnay
Fresh or cream cheeses: Riesling and Gewurztraminer
Mature hard cheese: Sweet sherry, oaky Chardonnay, mature red wines
Blue cheese: Sweet or fortified wines (they mellow the saltiness)

Hi NaturalR,
Thanks for your question. Here’s what I recommend for each of the cheeses you mention.
Bruder Basil (German cow’s milk cheese): German Rieslings or hearty German beers would pair well.
Fontina (Swedish cow’s milk cheese): Barbaresco, Barolo, Barbera, Dolcetto, Pinot Grigio, Chenin Blanc, Chianti, Gewurztraminer, Late Harvest wine, Nebbiolo, Riesling, Soave, Verdicchio. (the first two wines, Barbaresco and Barolo, are excellent paired with Fontina; Barbera, Dolcetto and Pinot Grigio come a close second).
Mahon (Spanish cow’s milk cheese): Fruity wines, Rioja, tawny port, beer and red wine (the latter is especially good with aged Mahon).
