Seitan Pie with Sweet Potato Topping

Serves 6
Pie Filling
2 tablespoons vegetable oil
1 sweet onion, chopped
2 teaspoons garam masala
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon turmeric
1/2 teaspoon cardamom
1 1/2 teaspoons salt
1 tablespoon tomato paste
2 garlic cloves, minced
2 (8 ounces each) packages pre-seasoned seitan pieces
1 cup vegetable broth
2 slices, 1/2-inch-thick whole wheat bread, torn into bite-size pieces
1/2 cup almond, soy or rice milk
Topping
2 sweet potatoes, peeled and cut into 1/2-inch chunks
2 tablespoons vegan butter
2 tablespoons maple syrup
1/2 teaspoon ground ginger
1 tablespoon vegan sugar
pinch of salt
In a medium saucepan with the lid on, bring the sweet potatoes to a boil and cook until tender, about 15-20 minutes. Drain and set aside. Soak the bread in the milk and set aside.
Lightly oil a 8-inch x 8-inch x 2-inch ovenproof dish and set aside. Place the seitan pieces in a food processor and process until fine. (You may have to divide it into two batches to ensure that all the pieces are evenly processed). Set aside.
In a large skillet over medium heat, heat one tablespoon of the oil and saute the onion until soft and browned, about 10 minutes. Add the garam masala, ginger, cinnamon, turmeric, cardamom, salt, tomato paste and garlic and cook for a further 1 minute.
Add the remainder of the oil and seitan, stir to blend and cook until seitan is browned. Add the broth and cook until almost all the liquid is evaporated (you want just enough liquid for the mixture to be moist). Remove from the stovetop and add the bread mixture. Combine thoroughly.
Transfer the mixture into the prepared ovenproof dish and set aside. Preheat the oven to 350 degrees F.
Return the cooked sweet potatoes to the saucepan and add the butter, maple syrup, ginger, sugar and salt. Blend thoroughly and cook the mixture over medium heat until golden brown, about 3-5 minutes. Mash with a potato masher until smooth.
Spoon the sweet potatoes evenly over the seitan and use a fork to make whispy patterns. Bake for 25 minutes until hot.
