Oven-Roasted Vegetable Medley

Ingredients
1/2 red cabbage, thinly sliced
1 large carrot, peeled and sliced into rings
2 large zucchini, cut into 1/2-inch slices
2 large yellow squash, cut into 1/2-inch slices
1 large broccoli, cut into flowerets
1/4 cup extra virgin olive oil, plus more as needed
1-1/2 teaspoons salt, or to taste
To Roast the Vegetables
Preheat oven to 400 degrees F. Lightly grease a large roasting pan with some olive oil.
Toss the cabbage, carrot, zucchini, squash, broccoli, oil and salt in a large bowl, making sure to coat all the vegetables.
Roast in the oven for 35-45 minutes, or until vegetables are firm, but tender to the bite. Stir at least once during cooking and adding more salt and/or oil if needed.
