Lemon-Garlic Broccoli & Carrot Saute

When it comes to cooking with organic whole foods, sometimes less is more. In this recipe, the sharp garlic flavour and freshness of the lemon juice really lets the broccoli and carrots shine, so no additional aromatics are really necessary. You can have tasty veggies on the table in under 20 minutes, including prep time!

Serves 4

Ingredients

2 tablespoons vegan butter
1 tablespoon organic extra-virgin olive oil
1 organic broccoli, cut into flowerets
2 organic carrots, peeled and sliced into rings and then each ring quartered
4 large organic garlic cloves, minced
3 teaspoons fresh organic lemon juice

To Make the Saute

  • Steam the broccoli and carrots until firm, but still tender, about 5-7 minutes (no more, or the vegetables will become too soft and mushy when you saute them).
  • Heat the oil and butter until melted in a skillet over medium-high heat. Put the broccoli into the skillet and saute for 1 minute, stirring frequently. Add the carrots, garlic and lemon juice. Cook for a further 2 minutes, stirring frequently or until all the ingredients have been combined. Serve immediately.
