<strong>Even enthusiastic cooks don’t relish the thought of spending hours in a hot kitchen in the middle of summer.   The solution?    Quick, easy meals that are  both satisfying and flavourful without breaking a sweat.</strong><br />

<h3>WHOLE WHEAT PASTA WITH PESTO SAUCE:</h3>
<p><strong></strong><br />
Use store-bought pesto or make your own.<br />
To make your own:  Put two cups of basil leaves, a garlic clove, salt, pepper and olive oil as necessary in a blender (walnuts and vegan Parmesan cheese are optional).  Process until fine and serve over pasta.<br />
<strong></strong></p>
<h3>BLACK BEANS AND RICE:</h3>
<p><strong></strong><br />
Drain a can of whole corn kernels or use fresh.  Sear in olive oil with minced jalapeños and chopped onions; toss with fresh cilantro, salt, cooked black beans (if using canned, rinse and drain), chopped tomatoes, chopped bell pepper and lime.  Serve with brown rice for a satisfying, healthy meal.<br />
<strong></strong></p>
<h3>STUFFED PITA POCKETS:</h3>
<p><strong></strong><br />
Saute mushrooms, onions, bell peppers, thyme, oregano, salt and black ground pepper in olive oil until tender.  Stuff pita pockets with arugula (rocket) and vegetables.<br />
<strong></strong></p>
<h3>PASTA WITH GARLIC AND OIL:</h3>
<p><strong></strong><br />
Over medium-low heat, sauté sliced garlic in olive oil until tender, about 5 minutes.  Toss with pasta, preferably whole wheat, and some or all of the olive oil used to cook the garlic. Sprinkle with a toasted pine nuts (to toast nuts, heat over medium heat for 2-3 minutes; watch closely so that they do not burn).<br />
<strong></strong></p>
<h3>COBB SALAD:</h3>
<p><strong></strong><br />
Chop cooked vegetarian bacon; cut cooked vegetarian “chicken” into strips.<br />
Toss romaine and watercress or arugula (rocket) with chopped tomatoes, avocado, onion and vegan blue cheese. Add “bacon” and “chicken.” Drizzle with a combination of olive oil, vinegar and mustard.<br />
<strong></strong></p>
<h3>NICOISE SALAD:</h3>
<p><strong></strong><br />
Lightly steam green beans or asparagus. Arrange on a plate with salad greens,<br />
chickpeas (if using canned, rinse and drain), pan-fried diced tofu, black olives, sliced cucumber and tomato. Combine olive oil, vinegar, tarragon, oregano and thyme; drizzle over salad.<br />
<strong></strong></p>
<h3>MEXICAN SALAD:</h3>
<p><strong></strong><br />
Toss together greens, chopped tomato, chopped red onion, sliced avocado, a small can of black beans and kernels from a couple of ears of corn. Toss with crumbled tortilla chips and grated vegan cheese. Dress with olive oil, lime and chopped cilantro leaves.<br />

<h3>QUESADILLAS:</h3>
<p><strong></strong><br />
Use a combination of cheeses, like vegan cheddar cheese mixed with vegan mozzarella. Put on half of a large flour tortilla with pickled jalapenos, chopped onion, shallot or scallion, chopped tomatoes and grated radish. Fold tortilla over and brown on both sides in butter or olive oil, until cheese is melted.<br />
<strong></strong></p>
<h3>STUFFED PORTOBELLO MUSHROOMS:</h3>
<p><strong></strong><br />
Brush portobello caps with olive oil; sprinkle with salt and pepper.<br />
Over medium-high heat, saute chopped onions until tender (about 5 minutes); cool to room temperature, then combine with softened vegan cream cheese, rosemary and thyme.  Stuff caps with cheese mixture and place in a lightly greased ovenproof dish. Broil until mushrooms are tender and serve with store-bought or home-made marinara sauce.<br />
<strong></strong></p>
<h3>GRILLED OPEN-FACED SARMIES (SANDWICHES):</h3>
<p>Vegan cheese, cooked vegetarian bacon slices, tomato slices,<br />
chopped thyme or basil leaves, mayonnaise and chutney.  Mix together vegan mayo and chutney and spread on one side of each bread slice. Top with bacon and tomato slices, cheese and herbs. Place under grill until cheese has melted.

When it comes to doing right by our bodies, I&#8217;m sure we can all agree that reading food labels before purchasing items is imperative in making sensible choices and avoiding ingredients that might compromise our health. But what about liquid libations? Unlike food, alcoholic beverages do not have labels that share important information about products or how they were produced. If this matters to you, read on.<br />
<strong> </strong><br />
While reading an article about wine-making several years ago, I was alarmed to learn that not all wines are vegan.  Since wine is nothing but fermented grapes, how can wine not be vegan you may ask?  It turns out, it’s all in the fining: a process by which deposits that have accumulated during the life of a wine are removed.  The heavier particles, or deposits, sink to the bottom of the vat, while the lighter substances remain in suspension.  In order to clear the wine of, or coagulate, these suspended particles, some vintners will use animal-derived agents such as egg whites, isinglass (the air bladders of sturgeons or other fish—disgusting, but true) casein (milk protein), gelatin or chitosan (the shells of shell fish).  Bull&#8217;s blood is also used in some Mediterranean countries, though thankfully not in the United States or France. In vegan wines, non-animal agents such as bentonite (a type of clay) or sparkalloid (derived from seaweed) are used.<br />
<strong> </strong><br />
What makes the purchase of wine frustrating for vegans is that very few wineries (I have found only two so far: <strong>Orleans Hill </strong>and <strong>Our Daily Red</strong>) note on their wine bottles whether wines are vegan-friendly.  To further confuse the issue, a vintner could from year to year change a fining agent used for a specific varietal.  I&#8217;ve tested some of the wine guys at the wine stores by asking them if they stocked vegan-friendly wines and to see if they knew what I was talking about. They didn&#8217;t. Not to say that all wine guys are uninformed about vegan wines, but don&#8217;t expect them to know. The same holds true for liquor and beer.<br />

So how exactly do you know which alcoholic beverages are vegan?  You can contact the wineries, distillers or breweries yourself or access websites such as this one.<br />
<strong> </strong><br />
To help you get started, I&#8217;ve included lists for vegan wines, liquor and beer that I&#8217;ve stumbled upon so far. The information has been culled from websites such as <strong><a href="http://barnivore.com/"target="_blank"><strong>Barnivore</strong></a></strong> and <strong><a href="http://www.veganproducts.org/"target="_blank"><strong>Vegan Products</strong></a></strong>, so to my knowledge, the information is correct.  Nonetheless, my list is a work-in-progress and as I contact the wineries and receive their responses, the list will be frequently updated.<br />

Sipping Cabernet Sauvignon while writing this article reminds me of a glass seminar I attended  recently. Sceptical at first, I was informed by the sommelier that the appropriate shape and size of a glass will undoubtedly provide more pleasure for my nose and more zest for my palate.   To prove the point, all attendees had four high-quality glasses containing the relevant wines placed before them: Chardonnay, Pinot Noir, Sauvignon Blanc and a Bordeaux. A “joker” glass, not unlike the wine glasses one sees in a typical casual restaurant, served as the fifth. As we sipped each wine in its appropriate glass, we were then asked to pour the wine into the “joker” glass so that we could draw a smell and taste comparison. The diffierence was astounding!  The wonderful aromas and flavours we detected in each of the wines when served in their appropriate glasses were totally absent when served in the “joker” glass.<br />

But how could this be?  The sommelier explained that the shape and size are responsible for the flow of the wine and consequently where it touches the various taste zones of the tongue. The initial point of contact depends on the shape and volume of the glass, the diameter of the rim, and its finish (a cut and polished edge, which is desirable vs. a rolled edge, which is not).  Long story short and as a result of the seminar, I am a glass convert and now know that to fully appreciate the personality of different grape varieties and the subtle character of wines, it is essential to have an appropriately fine-tuned glass shape.<br />

Peppadew® is the registered trademark name for a piquant South African  fruit that looks like a cross between a miniature red pepper and a cherry  tomato. While on holiday 25 years ago in the Eastern Cape, a business- man (who wishes to remain anonymous) spotted a bush laden with small,  bright red fruit that when eaten, had a peppery yet sweet flavour. Seedlings  cultivated from the mother plant combined with years of research has led him to develop a plant producing seedless fruit with pleasant levels of heat.</p>
<p>Now available in the United States, the versatile zingy-sweet pepper has  captured the attention of celebrity chefs: Guy Fieri, host of the Food Network’s  Guy’s Bites, is a Peppadew fan. Even Panera Bread bakery and cafes as well as  several restaurants in the Bellagio and Caesars Palace in Las Vegas have included  Peppadews on their menus. The fruit is a big hit at bars and nightclubs across the  country and is also being enjoyed abroad in Britain, Europe, Canada and Australia.</p>
<p>Peppadew contains no preservatives, is a non-genetically modified organism (GMO), has a 24-month shelf life and is kosher. The  peppers taste fabulous in pastas, salads (my personal favourite), sauces  and marinades, and are perfect for stuffing with cream cheese.</p>
