		<description>@WarmCloud, that&#039;s an excellent question. When using tomato concasse in soups, sauces and stews, removing the skin makes for a smoother, creamier texture. If you leave the skin on during these applications, they will pull away from the chopped tomato pieces and end up as little pieces in your final dish, which is not the desired result we are going for. You may leave them on for salads or when garnishing a dish, but it is not as visually appealing as when the skins have been removed.</description>
